As you might remember, as part of my goals for November, I am going to force myself to start eating breakfast more regularly.
Last Saturday, The Boyrfriend and I were in a rush to get to Butler's Orchard for some pumpkins, squash, and other fall goodies before it got too late in the day (it was a super busy Saturday). I knew that we both needed to eat something for breakfast, and that it would have to be something healthy that would give us an energy boost for a few hours.
One of my super powers is the ability to look at a pantry/fridge and declare that there is both nothing to eat, and at the same time, tons of different things to cook.
So what did I do? I made a Mango Blueberry Smoothie.
Lex's Mango Blueberry Smoothie Recipe:
Prep time: 3-5 minutes
Cook time: 1 minute
1 cup fresh blueberries (can substitute frozen blueberries)
4 tablespoons plain, nonfat yogurt
1 scoop Cytosport Muscle Milk 100% Whey Vanilla Protein Powder (can sub w/any whey protein powder)
Ice (per your preference. I don't like my smoothies super thick)
Nutrition facts (per serving): 208 calories, 37g carbs, 2g fat, 16g protein
